These days everything gluten free, dairy free, this free that free… Who really knows whats good or not so good for you, except how your body feels after you eat it, right? I felt like starting this foodie conversation with Bread would be a good beginning. I mean check out the roots of bread…
Bread is a sign of civilization, a sign of God, a sign of good governance, and for most of history, the literal “staff of life,” without which the people would starve. Some say that “bread” itself comes from an older root having to do with brewing, in reference to the rising action of the yeast, but it’s more likely to have come from a root having to do with breaking things into little pieces. I created this quick bread recipe basically because I was home one day and craving butter, so I thought what ingredients I have here/now that can resemble bread.
And actually without much thought, this simple yet hearty bread hit the spot.
Sweet Hearty Bread
2 cups almond flour (sometimes I do 1 cup of millet flour and 1 cup of almond)
Pinch of salt
1 tsp baking soda
2 tb honey or maple syrup
1 tb flax meal (soaked in 1/2 cup of warm water for 5 minutes)
A generous amount of cinnamon ( if you want sweet bread)
- Mix the eggs with the flax mixture and set aside
- Preheat Oven
- Mix dry ingredients
- Stir in wet ingredients
- Flour your hands and make a ball with dough, then plop it on a pan and form whatever shape you like.
Bake, Cool, Butter, Eat
Bake for 30 min at 350 degrees
